Ingredients

  • Chicken thighs: 4 pieces, skin-on and bone-in
  • Jasmine rice: 1 cup (about 200 grams)
  • Chicken broth: 2 cups (about 480 ml)
  • Onions: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Bell peppers: 1 red and 1 yellow, diced
  • Frozen peas: 1 cup (about 150 grams)
  • Olive oil: 2 tablespoons
  • Spices: Paprika (1 teaspoon) and dried thyme (1 teaspoon)
  • Salt and black pepper: to taste

Instructions

  1. Pat the chicken thighs dry and season with salt, black pepper, paprika, and thyme.
  2. Heat olive oil in a large pot and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  3. Flip the chicken and cook for another 5 minutes, then remove from the pot.
  4. Sauté diced onions and bell peppers in the same pot for 3-4 minutes until onions are translucent, then add minced garlic and cook for 1 minute.
  5. Stir in jasmine rice and toast for 2 minutes, then add chicken broth and stir to combine.
  6. Return the chicken thighs to the pot skin-side up, cover, and simmer on low for 20-25 minutes.
  7. Sprinkle frozen peas on top, cover, and steam for an additional 5 minutes.
  8. Let sit covered for 5 minutes, fluff the rice, and garnish with fresh parsley if desired.
