A simple and satisfying one pot meal combining tender chicken, fluffy rice, and colorful vegetables.
Ingredients
- Chicken thighs: 4 pieces, skin-on and bone-in
- Jasmine rice: 1 cup (about 200 grams)
- Chicken broth: 2 cups (about 480 ml)
- Onions: 1 medium, diced
- Garlic: 3 cloves, minced
- Bell peppers: 1 red and 1 yellow, diced
- Frozen peas: 1 cup (about 150 grams)
- Olive oil: 2 tablespoons
- Spices: Paprika (1 teaspoon) and dried thyme (1 teaspoon)
- Salt and black pepper: to taste
Instructions
- Pat the chicken thighs dry and season with salt, black pepper, paprika, and thyme.
- Heat olive oil in a large pot and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
- Flip the chicken and cook for another 5 minutes, then remove from the pot.
- Sauté diced onions and bell peppers in the same pot for 3-4 minutes until onions are translucent, then add minced garlic and cook for 1 minute.
- Stir in jasmine rice and toast for 2 minutes, then add chicken broth and stir to combine.
- Return the chicken thighs to the pot skin-side up, cover, and simmer on low for 20-25 minutes.
- Sprinkle frozen peas on top, cover, and steam for an additional 5 minutes.
- Let sit covered for 5 minutes, fluff the rice, and garnish with fresh parsley if desired.

- Feel free to customize with optional ingredients like carrots, corn, or greens.
