- 1 lb chicken breast, cubed
- 2 cups broccoli florets
- 1 cup bell peppers, sliced
- 2 cups rice
- 4 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chicken and cook until browned.
- Add broccoli and bell peppers. Stir for 3 minutes.
- Stir in rice, chicken broth, garlic powder, onion powder, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes or until rice is cooked.
- Fluff with a fork and serve hot.

- Feel free to add other vegetables.
