Ingredients

  • 4 chicken breasts
  • 1/4 cup balsamic vinegar

  • 1 cup cherry tomatoes
  • 1 cup spinach

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the mixture over them.
  4. Add cherry tomatoes around the chicken.
  5. Bake for 25-30 minutes or until the chicken is cooked through.
  6. In the last 5 minutes, add spinach to the dish.
  7. Serve warm.
