A simple and delicious one pan balsamic chicken recipe.
Ingredients

- 4 chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
- Place chicken breasts in a baking dish and pour the mixture over them.
- Add cherry tomatoes around the chicken.
- Bake for 25-30 minutes or until the chicken is cooked through.
- In the last 5 minutes, add spinach to the dish.
- Serve warm.
Notes
- Adjust cooking time for larger chicken breasts.
- Use fresh herbs for better flavor.
- Serve with rice or pasta if desired.
