Description
A refreshing and flavorful pasta salad made with olive oil and herbs.
Ingredients

- 8 oz pasta
- 1/2 cup olive oil
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup parsley, chopped
- 1/4 cup basil, chopped
- Salt to taste
- Pepper to taste
- 1 tablespoon lemon juice
Instructions
- Cook pasta according to package instructions.
- Drain and rinse under cold water.
- In a large bowl, combine olive oil, lemon juice, salt, and pepper.
- Add cooked pasta, cherry tomatoes, cucumber, red onion, parsley, and basil.
- Toss until well mixed.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use whole wheat pasta for a healthier option.
- Add grilled chicken for extra protein.
- Feel free to customize with your favorite vegetables.
