Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add carrots, celery, onion, and garlic. Cook until softened.
  3. Stir in shredded chicken and chicken broth. Bring to a boil.
  4. Add gnocchi and thyme. Reduce heat and simmer until gnocchi are cooked.
  5. Stir in heavy cream. Cook for 5 more minutes.
  6. Season with salt and pepper. Serve hot, garnished with parsley.

Notes

  • You can use rotisserie chicken for convenience.
