A creamy and hearty soup featuring chicken and gnocchi.
Ingredients

- 1 tablespoon olive oil
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (16 oz) gnocchi
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add carrots, celery, onion, and garlic. Cook until softened.
- Stir in shredded chicken and chicken broth. Bring to a boil.
- Add gnocchi and thyme. Reduce heat and simmer until gnocchi are cooked.
- Stir in heavy cream. Cook for 5 more minutes.
- Season with salt and pepper. Serve hot, garnished with parsley.
Notes
- You can use rotisserie chicken for convenience.
- Add spinach for extra nutrition.
- Store leftovers in an airtight container in the fridge.
