A classic old fashioned oatmeal cake that is moist and flavorful.
Ingredients

- 1 cup rolled oats
- 1 cup boiling water
- 1/2 cup butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine oats and boiling water. Let it sit for 30 minutes.
- In a mixing bowl, cream butter, brown sugar, and granulated sugar together.
- Add eggs and vanilla to the mixture and combine well.
- In another bowl, mix flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet mixture, alternating with the oat mixture.
- Pour the batter into a greased baking pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
Notes
- Let the cake cool before serving.
- Top with frosting or enjoy plain.
- Store leftovers in an airtight container.
