Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef with salt, pepper, and rosemary.
- Heat olive oil in a skillet over medium-high heat.
- Sear the beef on all sides until browned.
- Transfer the beef to the oven and roast for 20-25 minutes.
- In the same skillet, add garlic and cook for 1 minute.
- Add red wine and beef broth, scraping the pan to deglaze.
- Simmer the sauce until thickened.
- Steam the mixed vegetables until tender.
- Slice the beef and serve with the sauce and vegetables.
