- 2 cups of quinoa
- 1 cup of cranberries
- 1 cup of butternut squash, diced
- 1/2 cup of walnuts, chopped
- 1/2 cup of feta cheese, crumbled
- 2 tablespoons of olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss diced butternut squash with olive oil, salt, and pepper.
- Spread squash on a baking sheet and roast for 25 minutes.
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, roasted squash, cranberries, walnuts, and feta cheese.
- Toss gently to mix all ingredients.
- Serve warm or at room temperature.
