Instructions

  1. Preheat the oven to 375°F.
  2. Season the turkey breast with salt, pepper, and thyme.
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add butternut squash and cook until tender.
  5. Mix quinoa, cranberries, and green beans into the pan.
  6. Stuff the turkey breast with the quinoa mixture.
  7. Place the turkey in a baking dish and cover with foil.
  8. Bake for 1.5 hours, removing the foil for the last 30 minutes.
  9. Let it rest for 10 minutes before slicing.
