- 1 whole roasted duck
- 2 cups wild rice
- 1 cup cranberries
- 1 cup chopped pecans
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon fresh rosemary
Instructions
- Preheat the oven to 375°F (190°C).
- Season the duck with salt, pepper, and rosemary.
- Roast the duck for about 2 hours, or until the internal temperature reaches 165°F (74°C).
- Cook wild rice according to package instructions.
- In a skillet, heat olive oil and toast the pecans.
- Add cranberries and cooked rice to the skillet with pecans.
- Serve the duck with the wild rice mixture.

- Duck can be substituted with chicken or turkey.
- Adjust seasonings to taste.
