A delightful dessert featuring creamy white chocolate cheesecake topped with mulled wine fruit.


Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 300g cream cheese
  • 200g white chocolate, melted
  • 100g icing sugar
  • 300ml double cream
  • 200ml mulled wine
  • 250g mixed berries
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Instructions

  1. Crush the digestive biscuits and mix with melted butter.
  2. Press the mixture into the bottom of serving glasses.
  3. In a bowl, combine cream cheese, melted white chocolate, and icing sugar.
  4. Whip the double cream to soft peaks and fold into the cream cheese mixture.
  5. Layer the cheesecake mixture over the biscuit base.
  6. In a saucepan, heat mulled wine with berries, cinnamon, and nutmeg until warm.
  7. Top the cheesecakes with the mulled wine fruit mixture.
  8. Chill in the fridge for at least 4 hours before serving.
