- 200g digestive biscuits
- 100g unsalted butter, melted
- 300g cream cheese
- 200g white chocolate, melted
- 100g icing sugar
- 300ml double cream
- 200ml mulled wine
- 250g mixed berries
- 1 tsp cinnamon
- 1 tsp nutmeg
Instructions
- Crush the digestive biscuits and mix with melted butter.
- Press the mixture into the bottom of serving glasses.
- In a bowl, combine cream cheese, melted white chocolate, and icing sugar.
- Whip the double cream to soft peaks and fold into the cream cheese mixture.
- Layer the cheesecake mixture over the biscuit base.
- In a saucepan, heat mulled wine with berries, cinnamon, and nutmeg until warm.
- Top the cheesecakes with the mulled wine fruit mixture.
- Chill in the fridge for at least 4 hours before serving.
