Easy no-bake sides for Thanksgiving.


Ingredients

  • 1 cup of cooked quinoa
  • 1 cup of black beans, rinsed
  • 1 cup of corn, canned or frozen
  • 1 red bell pepper, diced
  • 1/4 cup of cilantro, chopped
  • 1/4 cup of lime juice
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine quinoa, black beans, corn, and red bell pepper.
  2. Add cilantro, lime juice, cumin, salt, and pepper.
  3. Toss everything together until well mixed.
  4. Chill in the refrigerator for at least 30 minutes before serving.
