No Bake Chocolate Eclair Icebox Cake: 5 Layers of Joy

Description

A simple and delicious no bake chocolate eclair icebox cake.


Ingredients

Scale
  • 2 packages of graham crackers
  • 2 boxes of instant vanilla pudding mix
  • 4 cups of milk
  • 1 container of whipped topping (8 oz)
  • 1 cup of chocolate chips
  • 1 cup of heavy cream
  • 1/4 cup of powdered sugar

Instructions

  1. In a bowl, mix the pudding mix and milk until thick.
  2. Fold in the whipped topping.
  3. In a 9×13 inch pan, layer graham crackers on the bottom.
  4. Spread half of the pudding mixture over the graham crackers.
  5. Add another layer of graham crackers.
  6. Spread the remaining pudding mixture on top.
  7. Add a final layer of graham crackers.
  8. For the topping, heat heavy cream and chocolate chips together until smooth.
  9. Pour the chocolate mixture over the graham cracker layer.
  10. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

  • Use any type of chocolate for the topping.
  • Allow the cake to chill for better flavor.
  • Can be made a day in advance.
