Description
A simple and delicious no bake chocolate eclair icebox cake.
Ingredients
Scale
- 2 packages of graham crackers
- 2 boxes of instant vanilla pudding mix
- 4 cups of milk
- 1 container of whipped topping (8 oz)
- 1 cup of chocolate chips
- 1 cup of heavy cream
- 1/4 cup of powdered sugar
Instructions
- In a bowl, mix the pudding mix and milk until thick.
- Fold in the whipped topping.
- In a 9×13 inch pan, layer graham crackers on the bottom.
- Spread half of the pudding mixture over the graham crackers.
- Add another layer of graham crackers.
- Spread the remaining pudding mixture on top.
- Add a final layer of graham crackers.
- For the topping, heat heavy cream and chocolate chips together until smooth.
- Pour the chocolate mixture over the graham cracker layer.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
Notes
- Use any type of chocolate for the topping.
- Allow the cake to chill for better flavor.
- Can be made a day in advance.
