A simple and delicious no bake blueberry cheesecake.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh blueberries
- ¼ cup sugar
Instructions
- Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- In another bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream into cream cheese mixture.
- Spread mixture over the crust in the pan.
- In a saucepan, combine blueberries and sugar. Cook until berries break down.
- Cool blueberry mixture and pour over cheesecake.
- Refrigerate for at least 4 hours before serving.
Notes
- Use fresh blueberries for best flavor.
- Can substitute graham cracker crumbs with digestive biscuits.
- Make sure cream cheese is at room temperature for easier mixing.
