Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh blueberries
  • ¼ cup sugar

Instructions

  1. Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  2. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form.
  4. Fold whipped cream into cream cheese mixture.
  5. Spread mixture over the crust in the pan.
  6. In a saucepan, combine blueberries and sugar. Cook until berries break down.
  7. Cool blueberry mixture and pour over cheesecake.
  8. Refrigerate for at least 4 hours before serving.

  • Can substitute graham cracker crumbs with digestive biscuits.
