Ingredients

  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup of cherry tomatoes, halved
  • 1 can of black beans, drained and rinsed
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa according to package instructions.
  3. In a pan, heat olive oil over medium heat.
  4. Add onion and garlic; sauté until soft.
  5. Add bell pepper and zucchini; cook until tender.
  6. Stir in cherry tomatoes, black beans, cumin, salt, and pepper.
  7. Combine cooked quinoa with vegetable mixture.
  8. Garnish with fresh cilantro before serving.
