A delicious vegetarian dinner perfect for New Year’s celebration.
Ingredients

- 2 cups of quinoa
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup of cherry tomatoes, halved
- 1 can of black beans, drained and rinsed
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a pan, heat olive oil over medium heat.
- Add onion and garlic; sauté until soft.
- Add bell pepper and zucchini; cook until tender.
- Stir in cherry tomatoes, black beans, cumin, salt, and pepper.
- Combine cooked quinoa with vegetable mixture.
- Garnish with fresh cilantro before serving.

- Feel free to add other vegetables as desired.
- Serve with a side salad for a complete meal.
