Ingredients

  • 1 cup of rice
  • 2 cups of water
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 cup of mixed vegetables
  • 1/2 cup of black-eyed peas
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 2 tablespoons of soy sauce

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, bring water to a boil.
  3. Add rice, olive oil, and salt to the boiling water.
  4. Reduce heat, cover, and simmer for 15 minutes.
  5. In another pan, sauté mixed vegetables and black-eyed peas.
  6. Add garlic powder and onion powder to the vegetables.
  7. Stir in soy sauce for flavor.
  8. Once the rice is cooked, fluff it with a fork.
  9. Combine rice with the vegetable mixture.
  10. Serve warm for your New Year’s celebration.
