Ingredients

- 1 cup of rice
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 cup of mixed vegetables
- 1/2 cup of black-eyed peas
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 2 tablespoons of soy sauce
Instructions
- Rinse the rice under cold water.
- In a pot, bring water to a boil.
- Add rice, olive oil, and salt to the boiling water.
- Reduce heat, cover, and simmer for 15 minutes.
- In another pan, sauté mixed vegetables and black-eyed peas.
- Add garlic powder and onion powder to the vegetables.
- Stir in soy sauce for flavor.
- Once the rice is cooked, fluff it with a fork.
- Combine rice with the vegetable mixture.
- Serve warm for your New Year’s celebration.
