Ingredients

  • 1 bell pepper, chopped
  • 1 onion, chopped

  • 2 tablespoons of olive oil
  • 1 teaspoon of cumin
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and bell pepper, sauté until soft.
  3. Stir in minced garlic and cumin, cook for 1 minute.
  4. Add rice, black beans, and salt; stir well.
  5. Pour in 4 cups of water, bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Remove from heat, let it sit for 5 minutes before serving.
  8. Garnish with fresh cilantro.
