Ingredients

- 2 cups of rice
- 1 cup of black beans
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and bell pepper, sauté until soft.
- Stir in minced garlic and cumin, cook for 1 minute.
- Add rice, black beans, and salt; stir well.
- Pour in 4 cups of water, bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat, let it sit for 5 minutes before serving.
- Garnish with fresh cilantro.

- Adjust the spice level to your preference.
- This dish pairs well with avocado slices.
