Ingredients

  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 tablespoon of herbs de Provence

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add mixed vegetables, rice, salt, pepper, and herbs. Stir well.
  5. Place the whole chicken in a baking dish and season with salt and pepper.
  6. Fill the chicken cavity with the rice mixture.
  7. Cover with foil and bake for 1.5 hours.
  8. Remove foil and bake for an additional 30 minutes until chicken is golden.
  9. Let it rest for 10 minutes before serving.
