Ingredients

- 1 whole chicken
- 2 cups of rice
- 1 cup of mixed vegetables
- 3 tablespoons of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of herbs de Provence
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add mixed vegetables, rice, salt, pepper, and herbs. Stir well.
- Place the whole chicken in a baking dish and season with salt and pepper.
- Fill the chicken cavity with the rice mixture.
- Cover with foil and bake for 1.5 hours.
- Remove foil and bake for an additional 30 minutes until chicken is golden.
- Let it rest for 10 minutes before serving.
Notes
- Serve with a side salad.
- Pair with sparkling wine.
- Adjust seasoning to taste.
