Instructions
- Preheat the oven to 400°F.
- Season the beef with salt, pepper, and garlic.
- Heat olive oil in a skillet and sear the beef on all sides.
- Transfer the beef to a baking dish and pour red wine over it.
- Roast in the oven for 25-30 minutes or until desired doneness.
- While the beef cooks, boil the baby potatoes until tender.
- Steam the asparagus until bright green.
- Slice the beef and serve with potatoes and asparagus.
- Garnish with fresh herbs.
