Ingredients

- 1 whole chicken (4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- Salt and pepper to taste
- 4 cups mixed vegetables (carrots, potatoes, green beans)
- 1 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- Rub the chicken with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Place the chicken in a roasting pan.
- Arrange the mixed vegetables around the chicken.
- Pour chicken broth over the vegetables.
- Roast in the oven for 1 hour and 15 minutes or until the chicken is cooked through.
- Let the chicken rest for 10 minutes before carving.
