Ingredients

- 2 lbs of beef tenderloin
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 1 cup red wine
- 2 cups mixed vegetables (carrots, green beans, bell peppers)
- 1 tbsp butter
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Heat a skillet over high heat and sear the beef on all sides until browned.
- Transfer the beef to a baking dish and roast in the oven for 25-30 minutes for medium-rare.
- In the same skillet, add red wine and reduce for 5 minutes.
- Prepare the vegetables in the skillet with butter until tender.
- Let the beef rest for 10 minutes before slicing.
- Serve with vegetables and red wine sauce.
