Ingredients

  • 2 lbs of beef tenderloin
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup red wine
  • 2 cups mixed vegetables (carrots, green beans, bell peppers)
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Heat a skillet over high heat and sear the beef on all sides until browned.
  4. Transfer the beef to a baking dish and roast in the oven for 25-30 minutes for medium-rare.
  5. In the same skillet, add red wine and reduce for 5 minutes.
  6. Prepare the vegetables in the skillet with butter until tender.
  7. Let the beef rest for 10 minutes before slicing.
  8. Serve with vegetables and red wine sauce.
