- 1 tablespoon of rosemary
Instructions
- Preheat your oven to 400°F.
- Season the beef with salt, pepper, and garlic.
- Heat olive oil in a skillet and sear the beef on all sides.
- Transfer the beef to the oven and roast for 25-30 minutes.
- While the beef cooks, boil the baby potatoes until tender.
- In a separate pan, sauté asparagus with olive oil, salt, and pepper.
- Let the beef rest before slicing.
- Serve with potatoes and asparagus, drizzled with red wine reduction.
