Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with garlic, olive oil, rosemary, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear the beef on all sides.
  4. Transfer the beef to the oven and roast for 25-30 minutes.
  5. In the same skillet, add red wine and scrape up any browned bits.
  6. Reduce the wine for 5 minutes, then add butter and stir until melted.
  7. Steam the mixed vegetables until tender.
  8. Let the beef rest for 10 minutes before slicing.
  9. Serve the beef with the wine sauce and vegetables.
