Ingredients

- 2 pounds of beef tenderloin
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of salt
- 1 teaspoon of black pepper
- 1 cup of red wine
- 2 tablespoons of butter
- 2 cups of mixed vegetables (carrots, broccoli, bell peppers)
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the beef tenderloin with garlic, olive oil, rosemary, salt, and pepper.
- Heat a skillet over medium-high heat and sear the beef on all sides.
- Transfer the beef to the oven and roast for 25-30 minutes.
- In the same skillet, add red wine and scrape up any browned bits.
- Reduce the wine for 5 minutes, then add butter and stir until melted.
- Steam the mixed vegetables until tender.
- Let the beef rest for 10 minutes before slicing.
- Serve the beef with the wine sauce and vegetables.
