A festive and delicious New Year’s dinner recipe.
Ingredients

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 lemon, halved
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 4 cups mixed vegetables (carrots, potatoes, and green beans)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub the chicken with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Stuff the cavity with lemon halves.
- Place the chicken in a roasting pan.
- Surround the chicken with mixed vegetables.
- Roast for 1.5 hours or until the chicken is cooked through.
- Let the chicken rest for 10 minutes before carving.

- Adjust seasonings to your preference.
- Use any seasonal vegetables you like.
- Leftovers make great sandwiches.
