Ingredients

- 4 cups of water
- 1 onion, chopped

- 1 bay leaf
- 1 cup of diced ham
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, combine the peas and water. Bring to a boil.
- Add the chopped onion, garlic, salt, pepper, olive oil, paprika, and bay leaf.
- Reduce heat and simmer for 1 hour or until peas are tender.
- Add diced ham and cook for an additional 15 minutes.
- Remove bay leaf before serving.
