  • 1 bay leaf
  • 1 cup of diced tomatoes

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add black-eyed peas, water, and spices.
  5. Bring to a boil, then reduce the heat to low.
  6. Add the bay leaf and diced tomatoes.
  7. Cover and simmer for 1 hour or until peas are tender.
  8. Remove bay leaf before serving.
