A traditional dish for New Year’s celebration, black-eyed peas symbolize good luck.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- Drain the peas and set them aside.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add the black-eyed peas, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove the bay leaf before serving.
Notes
- Serve with cornbread for a complete meal.
- Can add diced ham or bacon for extra flavor.
