Description
Traditional meals to celebrate the New Year.
Ingredients
Scale
- 2 cups of rice
- 1 pound of beans
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 tablespoons of olive oil
- 1 pound of meat (chicken, beef, or pork)
- 1 cup of mixed vegetables
Instructions
- Rinse the rice and beans under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onions, garlic, and bell pepper. Cook until soft.
- Add meat and cook until browned.
- Add rice, beans, salt, and pepper to the pot.
- Pour in water to cover the mixture. Bring to a boil.
- Reduce heat and simmer until rice is cooked and water is absorbed.
- Add mixed vegetables and stir well. Cook for an additional 5 minutes.
- Remove from heat and let it sit for 10 minutes before serving.
Notes
- Use your favorite type of meat.
- Adjust seasoning to taste.
- Serve with a side salad.
