Ingredients

  • 2 cups of rice
  • 1 pound of beans
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 1 pound of meat (chicken, beef, or pork)
  • 1 cup of mixed vegetables

Instructions

  1. Rinse the rice and beans under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onions, garlic, and bell pepper. Cook until soft.
  4. Add meat and cook until browned.
  5. Add rice, beans, salt, and pepper to the pot.
  6. Pour in water to cover the mixture. Bring to a boil.
  7. Reduce heat and simmer until rice is cooked and water is absorbed.
  8. Add mixed vegetables and stir well. Cook for an additional 5 minutes.
  9. Remove from heat and let it sit for 10 minutes before serving.

Notes

  • Use your favorite type of meat.
  • Adjust seasoning to taste.
