Ingredients

- 2 cups of rice
- 1 cup of black beans
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add garlic, cumin, and paprika, cook for 1 minute.
- Add rice and stir to coat in spices.
- Add black beans and 4 cups of water.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until rice is cooked.
- Fluff rice with a fork and garnish with cilantro.
- Serve hot and enjoy.

- This meal pairs well with grilled vegetables.
- Adjust spices to your taste.
