Ingredients

  • 2 cups of rice
  • 1 cup of black beans
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and bell pepper, sauté until soft.
  4. Add garlic, cumin, and paprika, cook for 1 minute.
  5. Add rice and stir to coat in spices.
  6. Add black beans and 4 cups of water.
  7. Bring to a boil, then reduce heat and cover.
  8. Simmer for 20 minutes or until rice is cooked.
  9. Fluff rice with a fork and garnish with cilantro.
  10. Serve hot and enjoy.
