Ingredients

- 2 lbs of beef tenderloin
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- 1 cup of red wine
- 2 cups of mixed vegetables (carrots, broccoli, and bell peppers)
- 1 tablespoon of butter
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with garlic, olive oil, salt, pepper, rosemary, and thyme.
- Sear the beef in a hot skillet for 2-3 minutes on each side.
- Transfer the beef to the oven and roast for 25-30 minutes.
- In the same skillet, add red wine and simmer for 5 minutes.
- Steam the mixed vegetables until tender.
- Serve the beef with wine sauce and vegetables.

- Let the beef rest for 10 minutes before slicing.
- Pair with mashed potatoes or a fresh salad.
