Ingredients

  • 2 cups long-grain rice
  • 1/2 cup palm oil
  • 1 onion, chopped
  • 2 tomatoes, blended
  • 1 bell pepper, blended
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • Salt to taste
  • 1 teaspoon pepper
  • Protein of choice (chicken, beef, or fish)

Instructions

  1. Heat palm oil in a pot over medium heat.
  2. Add chopped onions and sauté until translucent.
  3. Stir in blended tomatoes and bell pepper, cook until oil separates.
  4. Add thyme, salt, and pepper, mix well.
  5. Add rice and stir until coated.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for about 20 minutes.
  8. Add protein, cover again, and cook until rice is tender.
  9. Fluff rice with a fork and serve hot.
