Description
Native Jollof Rice made with palm oil for a rich flavor.
Ingredients

- 2 cups long-grain rice
- 1/2 cup palm oil
- 1 onion, chopped
- 2 tomatoes, blended
- 1 bell pepper, blended
- 2 cups chicken broth
- 1 teaspoon thyme
- Salt to taste
- 1 teaspoon pepper
- Protein of choice (chicken, beef, or fish)
Instructions
- Heat palm oil in a pot over medium heat.
- Add chopped onions and sauté until translucent.
- Stir in blended tomatoes and bell pepper, cook until oil separates.
- Add thyme, salt, and pepper, mix well.
- Add rice and stir until coated.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes.
- Add protein, cover again, and cook until rice is tender.
- Fluff rice with a fork and serve hot.
Notes
- Rinse the rice before cooking.
- Adjust spice levels to your preference.
- Serve with fried plantains or salad.
