Delicious birria tacos made with tender meat and flavorful broth.
Ingredients

- 2 lbs beef chuck roast
- 1 lb beef short ribs
- 3 dried guajillo chiles
- 3 dried ancho chiles
- 4 cloves garlic
- 1 onion, chopped
- 4 cups beef broth
- 2 tsp cumin
- 1 tsp oregano
- Salt to taste
- 12 corn tortillas
- Cilantro for garnish
- Lime wedges for serving
Instructions
- Soak the guajillo and ancho chiles in hot water for 15 minutes.
- Blend soaked chiles with garlic, onion, cumin, oregano, and a cup of beef broth until smooth.
- In a large pot, add beef chuck, short ribs, and the blended sauce.
- Add the remaining beef broth and salt, then bring to a boil.
- Reduce heat and simmer for 2.5 hours until the meat is tender.
- Remove the meat, shred it, and return it to the pot to keep warm.
- Heat tortillas on a skillet, dip in the broth, and fill with shredded meat.
- Garnish with cilantro and serve with lime wedges.
Notes
- Use homemade or store-bought beef broth.
- Adjust spice levels by adding more or fewer chiles.
- Serve with a side of the broth for dipping.
