Description

Delicious birria tacos made with tender meat and flavorful broth.


Ingredients

  • 2 lbs beef chuck roast
  • 1 lb beef short ribs
  • 3 dried guajillo chiles
  • 3 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 tsp cumin
  • 1 tsp oregano
  • Salt to taste
  • 12 corn tortillas
  • Cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Soak the guajillo and ancho chiles in hot water for 15 minutes.
  2. Blend soaked chiles with garlic, onion, cumin, oregano, and a cup of beef broth until smooth.
  3. In a large pot, add beef chuck, short ribs, and the blended sauce.
  4. Add the remaining beef broth and salt, then bring to a boil.
  5. Reduce heat and simmer for 2.5 hours until the meat is tender.
  6. Remove the meat, shred it, and return it to the pot to keep warm.
  7. Heat tortillas on a skillet, dip in the broth, and fill with shredded meat.
  8. Garnish with cilantro and serve with lime wedges.

  • Use homemade or store-bought beef broth.
  • Adjust spice levels by adding more or fewer chiles.
