Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar

- 1 large egg
- 1 cup powdered sugar
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, butter, sugar, and salt until crumbly.
- Press the mixture into a muffin tin to form cups.
- Bake for 10 minutes.
- In another bowl, whisk together egg, powdered sugar, lemon juice, lemon zest, and baking powder.
- Pour the lemon mixture into the baked cookie cups.
- Bake for an additional 15 minutes.
- Let cool before serving.
