- 1 pound boneless chicken breasts
- 1 cup diced tomatoes
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup bell pepper, chopped
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cook spaghetti according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Add chicken and cook until browned.
- Add garlic, onion, and bell pepper to the skillet.
- Stir in diced tomatoes and Italian seasoning.
- Cook until vegetables are tender.
- Combine chicken mixture with cooked spaghetti.
- Top with Monterey Jack cheese and cover until melted.
