Ingredients

- Unsalted butter: 3/4 cup (170 g), softened
- Brown sugar: 1 cup (200 g), packed
- Molasses: 1/2 cup (120 ml)
- Egg: 1 large
- Granulated sugar: for rolling (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
- In a large mixing bowl, cream together the softened unsalted butter and packed brown sugar until light and fluffy.
- Add the molasses and egg to the butter-sugar mixture and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- Scoop tablespoon-sized portions of dough and roll them into balls, optionally rolling in granulated sugar.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart, and bake for 10-12 minutes.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
