  • Brown sugar: 1 cup (200 g), packed
  • Molasses: 1/2 cup (120 ml)
  • Egg: 1 large
  • Granulated sugar: for rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
  3. In a large mixing bowl, cream together the softened unsalted butter and packed brown sugar until light and fluffy.
  4. Add the molasses and egg to the butter-sugar mixture and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  7. Scoop tablespoon-sized portions of dough and roll them into balls, optionally rolling in granulated sugar.
  8. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart, and bake for 10-12 minutes.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
