Description

Moist apple cinnamon crumb muffins are a delightful treat packed with fresh apples and topped with a crumbly cinnamon topping.


Ingredients

  • 1 teaspoon baking soda

  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 2 cups peeled and diced apples
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together melted butter, buttermilk, eggs, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the diced apples gently.
  6. In a separate bowl, combine brown sugar, oats, and a pinch of cinnamon for the topping.
  7. Scoop the batter into muffin cups and sprinkle the crumb topping on each muffin.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.
