Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together melted butter, buttermilk, eggs, and vanilla extract.
- Mix the wet ingredients into the dry ingredients until just combined.
- Fold in the diced apples gently.
- In a separate bowl, combine brown sugar, oats, and a pinch of cinnamon for the topping.
- Scoop the batter into muffin cups and sprinkle the crumb topping on each muffin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
