Ingredients

  • 6 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh mint, finely chopped
  • Salt to taste
  • Black pepper to taste
  • Extra mint leaves for garnish

Instructions

  1. Peel the hard-boiled eggs and cut them in half lengthwise.
  2. Remove the yolks and place them in a bowl.
  3. Add mayonnaise, Dijon mustard, chopped mint, salt, and pepper to the yolks.
  4. Mix until creamy and smooth.
  5. Spoon or pipe the mixture back into the egg whites.
  6. Garnish with extra mint leaves.
