Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 16 oz cream cheese
  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In a separate bowl, beat cream cheese and sugar until smooth.
  5. Add eggs, lemon juice, and lemon zest. Mix well.
  6. Fold in blueberries gently.
  7. Pour the mixture over the crust in the pans.
  8. Bake for 20-25 minutes or until set.
  9. Cool to room temperature and refrigerate for at least 2 hours.
