Ingredients
- Graham cracker crumbs: 1 cup
- Sugar: 1/4 cup, divided
- Butter: 1/4 cup, melted
- Cream cheese: 8 oz, softened
- Sweetened condensed milk: 1 can (14 oz)
- Key lime juice: 1/2 cup
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Mix until evenly coated.
- Press the crumb mixture into a mini muffin tin or small tart pans and bake for 8-10 minutes until lightly golden.
- Let the crusts cool completely.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sweetened condensed milk and remaining sugar, mixing well.
- Slowly pour in key lime juice while mixing until smooth.
- Spoon the filling into the cooled crusts, smoothing the tops with a spatula.
- Chill the mini pies in the refrigerator for at least 2 hours until the filling is set.
- Top with whipped cream and lime zest before serving.
