Description
Mini fruit tarts filled with creamy pastry cream and topped with fresh fruits.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1 egg yolk
- 1/4 teaspoon salt
- 1 cup milk
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Assorted fresh fruits (strawberries, kiwi, blueberries)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, butter, powdered sugar, egg yolk, and salt until a dough forms.
- Roll out dough and cut into circles to fit mini tart pans.
- Press dough into pans and bake for 15 minutes or until golden.
- In a saucepan, whisk together milk, sugar, cornstarch, and vanilla. Cook over medium heat until thickened.
- Allow pastry cream to cool completely.
- Fill each tart shell with pastry cream.
- Top with assorted fresh fruits.
- Chill tarts in the refrigerator before serving.
Notes
- Use seasonal fruits for the best flavor.
- You can make the pastry cream a day ahead.
- Keep the tarts refrigerated until serving.
