- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup cheese, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together eggs, salt, and pepper.
- Add spinach, bell pepper, onion, and cheese to the egg mixture.
- Grease a muffin tin.
- Pour the mixture into each muffin cup, filling them about 2/3 full.
- Bake for 15-20 minutes or until the muffins are set.
- Allow to cool slightly before removing from the tin.
