Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 large eggs
- 1/4 cup crushed graham crackers
- 1/4 cup melted butter
- Red and green sprinkles for decoration
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix cream cheese and sugar until smooth.
- Add vanilla extract and sour cream, mix well.
- Incorporate eggs one at a time, mixing after each addition.
- In another bowl, combine crushed graham crackers and melted butter.
- Press the graham cracker mixture into the bottom of mini cupcake liners.
- Pour the cheesecake mixture over the crust.
- Bake for 20 minutes or until set.
- Let cool, then refrigerate for at least 2 hours.
- Top with sprinkles before serving.
Notes
- Use room temperature cream cheese for a smooth batter.
- Adjust baking time for larger or smaller cheesecakes.
- Try adding fruit toppings for variety.
