Description

Minced Wallaby and Sweet Potato Pie is a delightful dish that combines the rich flavors of minced wallaby meat with the natural sweetness of sweet potatoes, encased in a flaky puff pastry.

Ingredients

  • Minced wallaby: 500 grams
  • Sweet potatoes: 2 medium-sized (about 400 grams)
  • Onion: 1 large, finely chopped
  • Garlic: 2 cloves, minced
  • Fresh thyme: 1 tablespoon, chopped (or 1 teaspoon dried thyme)
  • Puff pastry: 2 sheets (approximately 500 grams)
  • Egg: 1, beaten (for egg wash)
  • Olive oil: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Prepare the sweet potatoes by peeling and cutting them into small cubes. Cook in boiling salted water for 15-20 minutes until tender, then mash and set aside.
  2. In a large skillet, heat olive oil over medium heat, add chopped onion and sauté until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Add minced wallaby to the skillet, season with salt, pepper, and thyme. Cook for 5-7 minutes until browned and fully cooked. Stir in the mashed sweet potatoes and mix well.
  4. Preheat the oven to 200°C (400°F). Roll out puff pastry sheets and cut into circles (10-12 cm in diameter). Place filling in the center of each circle.
  5. Fold the pastry over the filling to create a half-moon shape, seal the edges, and brush with beaten egg. Bake for 20-25 minutes until golden brown.

Notes

  • Choose firm, blemish-free sweet potatoes for the best flavor.
  • Ground kangaroo can be used as an alternative to wallaby.
  • Experiment with different vegetables and spices for variations.
  • Serve with fresh green salad or steamed vegetables for a balanced meal.
