Ingredients

  • Minced beef: 500 grams
  • All-purpose flour: 300 grams
  • Onion: 1 medium, finely chopped
  • Bell pepper: 1 medium, finely chopped
  • Garlic: 3 cloves, minced
  • Cumin: 1 teaspoon
  • Paprika: 1 teaspoon
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste
  • Water: as needed for the dough
  • Fresh parsley: 1 cup, finely chopped
  • Olive oil: 1/2 cup
  • Red wine vinegar: 2 tablespoons
  • Garlic: 2 cloves, minced
  • Salt and pepper: to taste
  • Red pepper flakes: 1/2 teaspoon (optional)

Instructions

  1. Prepare the Chimichurri sauce by combining parsley, olive oil, red wine vinegar, minced garlic, salt, and pepper in a bowl. Let it sit for at least 15 minutes.
  2. In a skillet, heat olive oil and sauté onion and bell pepper for 5 minutes. Add garlic, cumin, and paprika, then cook for another minute.
  3. Add minced beef to the skillet, season with salt and pepper, and cook until browned (8-10 minutes). Let the filling cool slightly.
  4. Preheat the oven to 200°C (400°F). Roll out dough into circles, fill with beef mixture, fold, and seal the edges.
  5. Place Tucumanas on a baking sheet, brush with olive oil, and bake for 20-25 minutes until golden brown. Serve warm with Chimichurri sauce.
