Ingredients

  • 3 cups cooked turkey, shredded
  • 2 cups cooked rice
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1/2 cup chopped cilantro
  • 1 tablespoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine turkey, rice, black beans, corn, tomatoes, and half of the cheese.
  3. Add cilantro, cumin, salt, and pepper. Mix well.
  4. Transfer the mixture to a baking dish.
  5. Top with remaining cheese.
  6. Bake for 25-30 minutes or until cheese is melted and bubbly.
  7. Serve warm and enjoy.

Notes

  • Can substitute turkey with chicken.
  • Add jalapeños for a spicy kick.
  • Serve with sour cream and salsa on the side.
