- 3 cups cooked turkey, shredded
- 2 cups cooked rice
- 1 can black beans, drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1/2 cup chopped cilantro
- 1 tablespoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine turkey, rice, black beans, corn, tomatoes, and half of the cheese.
- Add cilantro, cumin, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish.
- Top with remaining cheese.
- Bake for 25-30 minutes or until cheese is melted and bubbly.
- Serve warm and enjoy.
Notes
- Can substitute turkey with chicken.
- Add jalapeños for a spicy kick.
- Serve with sour cream and salsa on the side.
