Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add bell pepper and cook for another 5 minutes.
  4. Add soaked black beans, broth, cumin, chili powder, and salt.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Puree half the soup for a creamy texture, if desired.
  7. Serve hot, garnished with fresh cilantro.
