A refreshing salad inspired by classic Mexican street corn.
Ingredients

- 4 ears of corn, husked
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup cotija cheese, crumbled
- 1 lime, juiced
- 2 tablespoons mayonnaise
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Grill the corn on medium heat until charred, about 10 minutes.
- Let the corn cool, then cut the kernels off the cob.
- In a large bowl, combine corn, tomatoes, red onion, and cilantro.
- In a small bowl, mix lime juice, mayonnaise, chili powder, and salt.
- Pour the dressing over the salad and mix well.
- Top with cotija cheese before serving.
