Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup tomato juice
  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 limes, juiced
  • 1 jalapeño, minced
  • Salt to taste

Instructions

  1. Boil shrimp in salted water until pink, about 3-4 minutes.
  2. Drain and cool shrimp under cold water.
  3. In a bowl, combine shrimp, tomato juice, cucumber, avocado, red onion, cilantro, lime juice, and jalapeño.
  4. Mix well and season with salt.
  5. Chill in the refrigerator for 30 minutes before serving.
