A refreshing Mexican shrimp cocktail packed with flavor.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 2 limes, juiced
- 1 jalapeño, minced
- Salt to taste
Instructions
- Boil shrimp in salted water until pink, about 3-4 minutes.
- Drain and cool shrimp under cold water.
- In a bowl, combine shrimp, tomato juice, cucumber, avocado, red onion, cilantro, lime juice, and jalapeño.
- Mix well and season with salt.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Serve with tortilla chips for added crunch.
- Adjust spice level by adding more or less jalapeño.
