Ingredients

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14 oz)
- 1 cup potatoes, diced
- 1/2 cup carrots, diced
- 1/2 cup peas
- 2 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until translucent.
- Add ground beef, cook until browned.
- Stir in bell pepper, tomatoes, potatoes, carrots, and peas.
- Add cumin, oregano, salt, and pepper.
- Simmer for 20 minutes until vegetables are tender.
- Serve hot with rice or tortillas.
Notes
- Adjust spices to your taste.
- Can substitute ground turkey or chicken.
- Best served with fresh cilantro on top.
