Ingredients

- 1 cup of rice
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 cup of black beans, cooked
- 1 cup of corn, canned or frozen
- 1 cup of diced tomatoes
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 cup of chopped cilantro
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, water, olive oil, and salt.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 20 minutes or until rice is tender.
- In a separate pan, mix black beans, corn, tomatoes, chili powder, and cumin.
- Cook for 5-7 minutes over medium heat.
- Fluff rice with a fork and stir in cilantro.
- Serve rice topped with the bean mixture.
